Trickling Springs started in 2001 by purchasing milk from one local farmer. Since then we’ve grown to purchasing from multiple farmers in our local area. So even though we are still very small we’ve been looking for ways to feature our individual farmers and allow you to try products specifically from on farm or another. Introducing… Farm Featured Cheeses!!! These cheeses will be produced by artisinal cheese makers throughout our regional area but will feature the farm directly that the milk comes from.

Question. Will this cheese be a limited edition or a long term product?
Answer. That will depend on whether you like the cheese? If it sells well, we will continue to produce it and likely make more unique cheeses from that farmers supply. If it doesn’t… well let’s just say we’ll try another style of cheese!

Question. How will I know what farm the cheese comes from?
Answer. Each label will have a photo of the farm and a scan code that you can scan with any cellphone that has a camera. This will bring up information on the farm, possibly a video or some photos as well as a brief history on the farm. If you can’t scan the code, the label will also have a web address that will directly connect to information on the farm. See an example of Hamilton Heights Swiss label here

The Hamilton Heights Swiss comes from Hamilton Heights Dairy, owned by Cliff & Maggie Hawbaker. For a brief introduction to Hamilton Heights dairy visit their Farm introduction page.

Hamilton Heights Swiss is a creamy raw milk swiss cheese that is aged over 60 days. This is a swiss cheese with a bit of sharpness but very smooth. A great snacking cheese or use to top your French Onion Soup!!! Yum
